I was making my typical meatloaf the other night. You know, the one out of the Good Housekeeping cookbook that I've had on my shelf for years? While I was working, I realized that I had used up the last of the onions earlier in the week. Uh oh! I raided the fridge, and, luckily, I had some scallions left over from another recipe. While I was in there, I looked around a little more, and I decided to throw in some different ingredients, just to keep things interesting. Here's what I tried. In my opinion, it was a VERY delicious experiment!
1 lb. ground beef (I like a very lean beef, approx. 93%)
¼ cup beer (I recommend a smooth porter, like Flying Dog’s “Road Dog Porter”)
¼ cup dry breadcrumbs
1/3 cup chopped fresh parsley
1 beaten egg
¼ cup chopped scallions, using the whitest parts
1 tbsp. dried oregano
1 tsp. black pepper
1 tsp. dried sage
1 package Papa John's garlic sauce (the kind that comes with the pizza)
Ketchup to taste
1.Preheat the oven to 350 degrees with the rack in the center position.
2.Use olive oil to oil a 9x13 glass baking dish.
3.Mix the egg, beer, parsley, scallions, oregano, pepper, sage, garlic sauce, and breadcrumbs in a large bowl. Add the ground beef and mix well.
4.Flatten the mixture into the bottom of the baking dish, pressing lightly with a fork.
5.Spread ketchup on top of the meatloaf, to taste. If you prefer, a mixture of half ketchup, half barbecue sauce is tasty, too.
6.Bake the meatloaf, uncovered, at 350 degrees for 35-45 minutes, until beef is cooked to medium-well and ketchup is bubbly.
